I love cooking with lemons in savory and sweet foods. Lemons add a fresh flavor full of depth; lemons and blueberry together are a refreshing combo that will never fail you. This is the perfect treat for your taste buds in celebration of the new season!
So how do you make it?
The easiest way to make a lemon cake is to make your favorite white or vanilla cake and add fresh lemon juice and zest. On this cake, I only put blueberries on the outside for a fresh fruit flavor. You can also add them into the batter, or freeze them before putting them into the batter and the juice from unfreezing will also flavor the cake.
Decorating a lemon or lemon blueberry cake is easy, because yellow and blue are naturally bold and beautiful together, and look great for spring. I made this a three layer cake, added blueberries around the side and put some baby’s breath on top. (So simple, yet so dressed up!)
